Chicken Taco Bite Appetizer

Mexican food is one of my favorite types of food to make. I am especially a fan of the easy recipes.Quick and easy is kind of my specialty. I especially love to make Mexican food probably because it is one type of food I could literally eat every day! Mexican food is also always a crowd pleaser. Who doesn’t love chips, salsa, guacamole, and tacos? It is one of the best foods to make for entertaining. This easy chicken taco bite appetizer is a fun appetizer to serve for guests. They look adorable and are guaranteed to disappear in minutes.

What you need to make them:

chicken breasts

1 tablespoon of canola oil

2 tablespoons chili powder

1 teaspoons cumin

juice of 1 lime

2 tablespoons of salsa

shredded cheddar cheese

scoop style tortilla chips

optional: diced tomato, lettuce, sour cream, and guacamole

Heat oil in a large pan over medium heat. Add chicken breasts. Cook chicken until pink color disappears about 5 minutes on each side. Remove chicken from pan and shred chicken with two forks or cut into small pieces. Return chicken to the pan over medium low heat. Mix in chili powder, cumin, salsa and lime juice. Stir everything together.

Lay out chips on a plate. Scoop in a small amount of chicken into each chip. Top with cheese while the chicken is still hot. Top with diced tomato and lettuce if desired. Then you are all done and ready to serve them!
