Today doesn’t feel like summer but soon enough it will be summer. This summer I am moving to Florida by the beach! I am beyond excited to be by the ocean. My daughter and I love to collect shells from the beach. She will take any piece of shell and I’m a little more picky with the ones I pick out. We have a bunch in jars that I still need to figure out what to do with. I think they make cute decorations just like that or maybe we can paint them. That’s the story of my life collecting things for later projects that never happen. She also tries to look in the shells to see if there is anything living inside or a pearl. We have found a few clam shells but nothing was left inside. I thought clam shells would make adorable treats for a beach or mermaid party! These were so easy to make! Since the frosting is on the inside it does not matter if you are a pro at piping frosting. I did use a piping bag and a star tip but you could just use a bag with the corner cut off for the frosting.
Summer is coming up and do you know what that means, mermaids! When I was a kid(okay also as an adult) I was obsessed with mermaids. My sister, cousins, and I would pretend to be mermaids. My grandmother would put us in the hammock and pretend that we were mermaids in a net. Bath time got a little splashy with splashing our mermaid tails. My parents had to sit through The Little Mermaid about fifty million times and that’s barely exaggerating! I’m a mermaid on the inside and this week on the blog I am letting my mermaid love out with some fun mermaid party ideas. Starting with these adorable mermaid party favors that look like mermaid tails. They are so easy to make and not to mention crazy affordable since they are made out of tissue paper!
Summer is all about the ice cream treats. My daughter likes to eat ice cream year round but now that it is warm out she has doubled her ice cream intake. The best way to keep us cool and not grumpy in the summer is to feed us ice cream. However, sometimes we get bored with just putting ice cream in a bowl. When you are eating it or serving it all summer you need to get creative. That is why I found these creative ways to serve ice cream from around the web. So many great ideas that make me think how did they think of that?! I will definitely be using some of these simply brilliant ice cream ideas this summer.
My birthday is in the middle of summer. As a kid the middle of summer in Phoenix is about 115 degrees. That meant for my birthday parties we always had pool parties. It also meant lots of ice cream. I think because of that my favorite cake has always been ice cream cake. I was never a big cake eater. For some reason I didn’t love cake. As an adult my tastes have expanded and now bring on the cake! Even though I didn’t love cake if you put some ice cream on cake I loved it. My daughter also is obsessed with ice cream! She is so funny she still is putting Christmas sprinkles on her ice cream because I bought an excessive amount of them. She will be celebrating Christmas in July with her Christmas sprinkles. I don’t make cakes very often but I love making cupcakes. That is why I made these fun ice cream cake cupcakes. They have all of the fun elements of an ice cream cake in a cupcake size.
Sometimes I just like to combined tasty things together to see what happens. It’s getting warmer out here, in fact today is 106 degrees, yuck! That means it is time for some ice cream. I also want donuts so what did I do, I used the donut as an ice cream bowl! Yes, it is possible and delicious you can eat the whole thing! I just used glazed donuts but you can use any kind of donuts. You could do sprinkle donuts and funfetti ice cream. You could do chocolate and chocolate! The possibilities are endless and I will try them all out! I’ve been on a bit of a donut kick lately and my daughter absolutely loves ice cream for dessert. This was a good compromise, the best of both worlds!
Mexican food is one of my favorite types of food to make. I am especially a fan of the easy recipes.Quick and easy is kind of my specialty. I especially love to make Mexican food probably because it is one type of food I could literally eat every day! Mexican food is also always a crowd pleaser. Who doesn’t love chips, salsa, guacamole, and tacos? It is one of the best foods to make for entertaining. This easy chicken taco bite appetizer is a fun appetizer to serve for guests. They look adorable and are guaranteed to disappear in minutes.

Cinco de Mayo is one of my favorite holidays. I grew up in Phoenix and we always have a big celebration for Cinco de Mayo. It is the perfect time of year to be outside by the pool. We have a pool party celebration with lots of food, of course beer, family, and friends. I love Mexican beer! Corona Extra was the first beer I ever tried and I immediately loved the clean, crisp taste. I also love the rich, refreshing flavor of Modelo Especial. It is a family favorite. For our Cinco de Mayo celebration everyone brings Mexican dishes to indulge in. Usually I am in charge of desserts. I am an expert at eating Mexican dishes but not at making them. Desserts are my favorite to make for all occasions. I love desserts that look like savory foods and that is why I thought it would be the perfect time to make cookies that look like little tacos. In the past I have made cupcakes that look like hot dogs and cookies that look like pizza. Now it’s time to tackle taco cookies! They add some extra fun to the dessert table! These have all the elements of a real taco in sweet dessert form. They also pair very well with Modelo Especial and Corona Extra. The flavors of these beers taste amazing with a little sweet bite. I don’t know about you but I need a little sweetness to balance out all of the spice from a Cinco de Mayo meal. My dad makes his specialty spicy shrimp that come with a warning label because of the heat level. Not everyone can handle the heat. I usually can have one before my mouth is on fire!
I love tacos and I love cookies so I just had to put the two together. I made these adorable funfetti taco cookies that have fluffy frosting and colorful sprinkles all in a little taco shape! You can make these will all store bought foods not form scratch or make it all from scratch. I actually used the store bought marshmallow frosting and it was not too shabby. I usually make a homemade buttercream but sometimes I just don’t have time. Lack of time doesn’t stop me from making cute treats though! These are really fun to serve for a fiesta, Cinco De Mayo, or Taco Tuesday fun. They would be perfect for a girls night too. I also like to make real tacos because they are one of the few things that I can make and don’t have to keep looking at a recipe. Not to brag but I am the slowest cook around. I constantly forget how much of what to put in then I improvise and it all goes downhill from there. Luckily these cookies you can improvise with and they will still turn out yummy. Get creative with the frosting and sprinkles! You can do different colors of frosting and any color combination of sprinkles or shapes of sprinkles.

Spring is my favorite and least favorite time of year all wrapped into one. I love it because, where I live in Phoenix, the weather is perfect! The flowers bloom and we get fields of beautiful yellow flowers. It is also the best time to get outside before the dreaded heat takes over. However, when the beautiful flowers start to bloom so do my allergies. All I want to do is be outside all the time, but my allergies say nope, no way, not going to happen. Do other people have talking allergies or is it just me? Since early adulthood I have experienced seasonal allergies. Unfortunately my allergies affect my ability to enjoy those beautiful flowers and the outdoors during spring. My daughter cannot stay inside when it’s nice out and I do my best to just deal with my constant runny nose.
