Pizookie Pops -Val Event Gal

Have you had the deliciousness that is a pizookie? If not you are missing out. It is a “pizza cookie”, basically a giant round chocolate chip cookie with ice cream and hot fudge on top. Pizookies are one of my all time favorite desserts! I wanted to make them into a form that is a bit easier to eat and not so ginormous. A regular pizookie you need a bunch of people to eat. Unless you are trying to pull a Man vs Food and eat the entire thing, then more power to you. Pizookie pops are so fun for parties and I love how the tops can be used as stands!

For the big cookie:

2 sticks of butter softened

2 eggs

1 teaspoon vanilla extract

2 1/4 cups of flour

3/4 cup sugar

3/4 cup packed brown sugar

1/4 teaspoon salt

1 teaspoon baking soda

1 bag semisweet chocolate chips

Preheat the oven to 350. With a standing mixer or hand mixer with large bowl on medium speed mix butter, sugars, vanilla, and eggs. In a separate medium sized bowl stir flour, salt and baking soda. Add the dry mixture to the large bowl slowly mixing on medium speed, mix for 2 minutes. Stir in chocolate chips with a large spoon. Grease a 9 x13 pan. Spread the cookie dough mixture into the pan. Bake for 20 minutes or until it is slightly browned on top. Take it out of the oven, cover with foil and let it cool off completely for about an hour. You can also eat these cookies as bars and they are so so yummy! Maybe some as pops and some as bars to mix it up ;).

Take push pops and press it down on the cookie then twist to loosen the piece. It should come out into the push pop, Remove the cookie from the push pop, set aside and continue with the rest of the cookie.

Put one cookie circle on the bottom of the push pop. Then add a small scoop of vanilla ice cream and some fudge(I used Hershey’s).

Repeat this with another cookie, ice cream, fudge and topped off with sprinkles! You can then freeze them. You don’t get the same warmness as with a big pizookie but it is still really yummy!
